When you crack open their shells, the meat within is tender and succulent.

Seeker Meat is a raw meat dropped by Seekers and Seeker Soldiers in the Mistlands. Eaten raw it gives 35 health and 12 stamina over 20 minutes at 2 regeneration, which makes it usable as emergency food and not only as an ingredient. It cooks on an iron cooking station but not on the wooden one. Recipes at the food preparation table ask for the raw meat specifically, and Cooked Seeker Meat will not stand in for it.
