Trees and logs take only chop damage and rock takes only pickaxe damage; every other type on the tool does nothing to them. Each swing then rolls your skill: at level 0 a swing lands for 25% to 55% of the tool's number, at 50 for 55% to 85%, and at 100 for 85% to 100%. That's why the swing counts above come as a range, and why the average sits a little above the middle of it: the last swing on a log usually overkills.
Chopping has a quirk. Damage to a tree uses your Wood Cutting skill, and Wood Cutting is the skill it trains, but the stamina a swing costs follows your Axes skill, which chopping never raises. Axes also restart their combo every time they hit a tree, so the third, double-damage swing of the combo never lands on wood and every chop takes the full length of a first swing.
Ore deposits come apart in two steps. The first hit breaks a one-health shell, and the deposit becomes a cluster of pieces, each with its own health and its own roll for ore. A tool below an object's tier does nothing at all, so a Bronze Pickaxe bounces off silver and only Black Metal reaches flametal. Skill levels are on the skill pages, and the trees guide lists where each tree grows.
